Sucrose phosphorylase belongs to the 13 family of glycosylhydrolases and is an enzyme that catalyzes the transfer of glucosidic bonds. It can catalyze the synthesis of 1-phosphate-glucose from sucrose and inorganic phosphates. This enzyme mainly uses sucrose and 1-phosphate-glucose as donors, and multiple substances such as polyhydroxy sugars and sugar alcohols, phenolic hydroxyl groups, carboxyl groups, etc. as receptors to catalyze the synthesis of various glycosides. This SucrosePhosphorylase is prepared by recombination. It catalyzes the phosphorylation reaction of sucrose to produce D-fructose and α-D-glucose-1-phosphate. The reaction formula is: Sucrose+Pi=α-D-glucose-1-phosphate+D-fructose.

The specific activity of this enzyme is over 100U/mg. After modification, it can withstand heat, and the reaction temperature can be carried out within the range of 30 to 65℃, with the optimal reaction temperature being 55℃. The activity loss was less than 30% after incubation at 60℃ for 60 hours.
